- 2 pounds beef chuck roast, cut into 2-inch pieces
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 (10.5 ounce) can condensed tomato soup
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Season beef cubes generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Brown beef on all sides.
- Transfer browned beef to your slow cooker.
- Add chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
- Stir in condensed tomato soup, beef broth, Worcestershire sauce, and dried thyme. Bring to a simmer.
- Pour the soup mixture over the beef in the slow cooker.
- Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until beef is tender.
- Shred beef with forks before serving.
Notes
- For extra flavor, you can add a bay leaf to the slow cooker.
- Serve over mashed potatoes, rice, or with crusty bread.
