  • 2 tablespoons chopped fresh cilantro, plus more for garnish
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional, for extra heat)
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • Sliced jalapeños (fresh or pickled), for garnish
  • Hot sauce (optional, for serving)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spread the tortilla chips in a single layer on a large baking sheet.
  3. In a medium bowl, combine the cooked corn, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, smoked paprika, and cayenne pepper (if using). Stir until well combined.
  4. Sprinkle half of the Monterey Jack and cheddar cheese over the tortilla chips.
  5. Spoon the corn mixture evenly over the chips.
  6. Top with the remaining Monterey Jack and cheddar cheese.
  7. Bake for 8-10 minutes, or until the cheese is melted and bubbly and the chips are slightly golden.
