Ingredients

  • 4 ears fresh corn, kernels removed
  • 1 tablespoon olive oil
  • 1 small white onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and minced (adjust to your spice preference)
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup cotija cheese, crumbled, plus more for topping
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice, fresh
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Cilantro, chopped, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and cook until soft, about 5 minutes.
  3. Stir in the garlic and jalapeño. Cook for 1 minute until fragrant.
  4. Add the corn kernels to the pot. Cook for 3-4 minutes, stirring occasionally.
  5. Pour in the broth. Bring the mixture to a simmer and cook for 10 minutes.
  6. Carefully transfer half of the soup mixture to a blender. Add the heavy cream, cotija cheese, mayonnaise, lime juice, chili powder, and cumin. Blend until completely smooth.
  7. Return the blended mixture to the pot with the remaining soup. Stir well.
  8. Heat the soup gently over low heat until warmed through. Do not boil.
  9. Taste and season with salt and pepper as needed.
  10. Serve the soup hot, garnished with extra crumbled cotija cheese and fresh cilantro.

Notes

  • For a smokier flavor, roast the corn kernels slightly before adding them to the soup base.
  • If you prefer a smoother texture overall, blend all the soup contents after simmering in the broth.
