  • 1 red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups fresh or frozen corn kernels
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Mexican crema
  • 1/4 cup crumbled cotija cheese, plus more for topping
  • 2 tablespoons chopped fresh cilantro, plus more for topping
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 12 small corn tortillas
  • Lime wedges, for serving


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add red onion and cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in corn kernels and cook for 5-7 minutes, stirring occasionally, until slightly charred. Remove from heat and let cool slightly.
  4. In a large bowl, combine mayonnaise, sour cream, cotija cheese, chopped cilantro, lime juice, chili powder, and smoked paprika.
  5. Add the cooled corn mixture to the bowl with the mayonnaise mixture. Stir until well combined. Season with salt and black pepper to taste.
  6. Warm the corn tortillas according to package directions (microwave, dry skillet, or oven).
  7. Fill each warm tortilla with a generous spoonful of the Mexican street corn mixture.
  8. Top with additional crumbled cotija cheese and fresh cilantro. Serve immediately with lime wedges.

Notes

  • For extra spice, add a pinch of cayenne pepper or a dash of your favorite hot sauce to the corn mixture.
  • If cotija cheese is unavailable, feta cheese can be a good substitute.
