Ingredients
Scale
- 1 package (17.3 ounces) frozen puff pastry, thawed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 10 ounces fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1 large egg, lightly beaten (for egg wash)
- 1 tablespoon water (for egg wash)
- Pinch of salt
- Pinch of black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 3 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Add the chopped spinach to the skillet. Cook until the spinach wilts completely and any excess liquid evaporates. Remove from heat and let the mixture cool slightly.
- In a bowl, combine the cooled spinach mixture, crumbled feta cheese, salt, and pepper. Mix well.
- Unfold the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 9 equal squares.
- Spoon about 1 tablespoon of the spinach and feta filling onto the center of each pastry square.
- Brush the edges of the pastry squares lightly with water. Fold the pastry over to form a triangle or a square pocket, pressing the edges firmly to seal. You can crimp the edges with a fork for extra security.
- Place the sealed pies on the prepared baking sheets.
- In a small bowl, whisk together the egg and water to create an egg wash. Brush the tops of the pies generously with the egg wash.
- Bake for 15 to 20 minutes, or until the pastry is golden brown and puffed.
- Let the pies cool slightly on the baking sheets before serving warm.
Notes
- Make sure your spinach mixture is dry before filling the pastry; excess moisture will make the crust soggy.
- If you do not have fresh spinach, you can use frozen, thawed, and thoroughly squeezed dry spinach instead.
- For a richer flavor, you can add a pinch of nutmeg to the filling.
- These pies taste great served with a side of tzatziki sauce for dipping.
