  • 1/4 cup unsalted butter, melted
  • 2 cups heavy cream, cold

  • 1/2 teaspoon vanilla extract
  • Green food coloring, optional
  • 1 cup mini chocolate chips


Instructions

  1. In a medium bowl, combine the crushed chocolate sandwich cookies and melted butter. Mix until well combined.
  2. Press the cookie mixture evenly into the bottom and up the sides of a 9-inch pie plate. Place the pie plate in the freezer while you prepare the filling.
  3. In a large bowl, whip the cold heavy cream until stiff peaks form.
  4. In a separate bowl, whisk together the cold sweetened condensed milk, peppermint extract, and vanilla extract. If desired, add a few drops of green food coloring and mix until evenly distributed.
  5. Gently fold the sweetened condensed milk mixture into the whipped cream until just combined. Be careful not to overmix.
  6. Fold in the mini chocolate chips.
