- 1/4 cup unsalted butter, melted
- 2 cups heavy cream, cold
- 1 (14 ounce) can sweetened condensed milk, cold
- 1 teaspoon peppermint extract

- Green food coloring, optional
- 1 cup mini chocolate chips
Instructions
- In a medium bowl, combine the crushed chocolate sandwich cookies and melted butter. Mix until well combined.
- Press the cookie mixture evenly into the bottom and up the sides of a 9-inch pie plate. Place the pie plate in the freezer while you prepare the filling.
- In a large bowl, whip the cold heavy cream until stiff peaks form.
- In a separate bowl, whisk together the cold sweetened condensed milk, peppermint extract, and vanilla extract. If desired, add a few drops of green food coloring and mix until evenly distributed.
- Gently fold the sweetened condensed milk mixture into the whipped cream until just combined. Be careful not to overmix.
- Fold in the mini chocolate chips.
- Pour the ice cream mixture into the prepared pie crust.
- Cover the pie with plastic wrap and freeze for at least 6 hours, or until firm.
- Before serving, let the pie sit at room temperature for 5-10 minutes to soften slightly.
Notes
- For a stronger mint flavor, add an extra 1/4 teaspoon of peppermint extract.
