Description

Bake a batch of these wonderfully moist bran muffins. They are packed with fiber, naturally sweetened, and perfect for a grab-and-go healthy breakfast or snack. This recipe is freezer-friendly for busy mornings.

  • 1 cup boiling water
  • 1 cup buttermilk
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted butter or oil
  • 1 large egg, lightly beaten
  • 1/2 cup brown sugar, packed (or maple syrup for natural sweetening)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup raisins or chopped apple (optional)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, combine the wheat bran and boiling water. Let this mixture sit for 10 minutes to soften the bran.
  3. To the bran mixture, add the buttermilk, applesauce, melted butter or oil, egg, brown sugar, and vanilla extract. Stir everything together until just combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients. Mix gently until you have just combined the batter; do not overmix. If using, fold in the raisins or chopped apple now.
  6. Divide the batter evenly among the 12 prepared muffin cups.
  7. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an oat bran muffin variation, substitute half of the wheat bran with oat bran.
  • These muffins freeze well. Cool them completely, place them in an airtight, freezer-safe bag, and freeze for up to three months. Thaw on the counter or microwave briefly before eating.
  • If you prefer a less refined sugar option, substitute the brown sugar with 1/2 cup of pure maple syrup, but reduce the buttermilk slightly to 3/4 cup to maintain batter consistency.
