Description
Create restaurant-quality molten chocolate lava cakes at home, perfect for impressing guests with their warm, gooey centers. This recipe is designed for a delightful dessert experience.
Ingredients
Scale
- 1/2 cup (1 stick) unsalted butter, plus more for greasing
- 4 ounces bittersweet or semisweet chocolate, chopped
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1/8 teaspoon salt
- 2 tablespoons all-purpose flour
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 425°F (220°C). Butter and lightly flour four 6-ounce ramekins.
- In a heatproof bowl set over a saucepan of simmering water, melt the butter and chopped chocolate, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, and salt until well combined.
- Gradually whisk the slightly cooled chocolate mixture into the egg mixture until smooth.
- Gently fold in the flour until just combined. Do not overmix.
- Divide the batter evenly among the prepared ramekins.
- Place the ramekins on a baking sheet and bake for 10-12 minutes, or until the edges are set but the center is still soft.
- Let the lava cakes rest in the ramekins for 1 minute.
- Carefully invert each ramekin onto a serving plate.
- Dust with powdered sugar, if desired, and serve immediately.
Notes
- For a richer flavor, use high-quality bittersweet chocolate.
- Ensure your oven is properly preheated for the best results.
- Do not overbake, as this will prevent the molten center from forming.
- Serve with fresh berries or a scoop of vanilla ice cream for an extra treat.
