- 8 ounces mushrooms, sliced
- 1 cup Arborio rice
- 1/2 cup dry white wine (optional)
- 4 cups hot vegetable broth
- 5 ounces fresh spinach
- 1/2 cup grated Parmesan cheese
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil and butter in a large skillet or Dutch oven over medium heat.
- Add chopped onion and cook until softened and translucent, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add sliced mushrooms and cook until they release their liquid and begin to brown, about 5-8 minutes.
- Add Arborio rice to the skillet and stir constantly for 1-2 minutes until the edges of the grains appear slightly translucent.
- Pour in the white wine (if using) and stir until it is completely absorbed.
- Begin adding the hot vegetable broth, one ladleful at a time, stirring frequently. Wait until each addition of broth is almost completely absorbed before adding the next.
- Continue this process for about 18-20 minutes, or until the rice is creamy and al dente (tender but still firm to the bite).
- Stir in the fresh spinach and cook until it wilts, about 1-2 minutes.
- Remove from heat and stir in the grated Parmesan cheese.
- Season with salt and freshly ground black pepper to taste.
- Serve immediately.
