- 1/2 cup champagne, plus more for frosting
- 1/2 cup milk
- For the Frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup champagne
- 1 teaspoon vanilla extract
- Optional: Edible glitter or gold sprinkles for decoration
Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a small bowl, whisk together the champagne and milk.
- Alternately add the dry ingredients and the champagne-milk mixture to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
- Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
- While the cupcakes are cooling, prepare the frosting. In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, alternating with the champagne, until smooth and fluffy. Stir in the vanilla extract. If the frosting is too thin, add more powdered sugar; if too thick, add a little more champagne.
- Once the cupcakes are completely cool, frost them using a piping bag or a spatula.
- Decorate with edible glitter or gold sprinkles for an extra festive touch.

- For a stronger champagne flavor, you can reduce the milk slightly and increase the champagne in the batter.
- If you don’t have champagne, you can use sparkling wine or even a clear soda like lemon-lime soda.
