Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the sugar to the dry ingredients and whisk briefly to combine.
- Make a well in the center of the dry ingredients. Add the eggs, olive oil, milk, lemon zest, and orange zest. Whisk until just combined and smooth. Do not overmix.
- Whisk in the lemon juice, orange juice, and vanilla extract until fully incorporated.
- Pour the batter into the prepared cake pan.
- Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
- If desired, dust with powdered sugar before serving.
