- 1.5 lb boneless, skinless chicken thighs
- 1 lb fresh green beans, trimmed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup soy sauce (low sodium preferred)
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
- 1 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
Instructions
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
- Pat the chicken thighs dry and season both sides lightly with salt and pepper.
- In a small bowl, whisk together the minced garlic, soy sauce, honey, apple cider vinegar, ground ginger, and red pepper flakes (if using) to create the sauce.
- Place the trimmed green beans on one side of the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and toss to coat. Season lightly with salt and pepper.
- Place the seasoned chicken thighs on the other side of the baking sheet. Brush half of the honey garlic sauce evenly over the chicken.
- Bake for 15 minutes.
- Remove the pan from the oven. Flip the chicken and brush with the remaining sauce. Toss the green beans gently.
- Return the pan to the oven and bake for another 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce has thickened slightly.
- If the sauce needs more thickening, remove the chicken and beans to a plate. Place the pan back in the oven for 1 minute, then whisk the cornstarch slurry into the remaining sauce on the pan until it thickens into a glaze. Pour the glaze over the chicken and beans before serving.
Notes
- For crispier green beans, toss them with 1 teaspoon of baking soda before seasoning and roasting.
- If you prefer chicken breasts, slice them into 1-inch thick cutlets and reduce the total cooking time by about 5 minutes.
- Serve this dish over steamed rice or cauliflower rice to absorb the extra sauce.
