  • 1 tablespoon butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped

  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry and season them with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken breasts for 3-4 minutes per side, until golden brown. Remove chicken from the skillet and set aside.
  4. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
  5. Stir in the minced garlic and chopped sun-dried tomatoes, and cook for 1 minute until fragrant.
  6. Pour in the heavy cream and chicken broth, bringing the mixture to a simmer.
  7. Stir in the grated Parmesan cheese until melted and the sauce is smooth.
  8. Add the fresh spinach and stir until it wilts into the sauce.
  9. Return the chicken breasts to the skillet, nestling them into the sauce.
  10. Reduce heat to low, cover, and simmer for 10-15 minutes, or until the chicken is cooked through and no longer pink in the center.
  11. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes.
