Description

Make this simple ground turkey casserole entirely in one baking dish for an easy weeknight dinner and minimal cleanup.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 ounce) can cream of mushroom soup (or low-sodium alternative)
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup cooked egg noodles or rice
  • 1/2 cup shredded cheddar cheese


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the ground turkey to the skillet. Cook, breaking it up with a spoon, until it is fully browned. Drain off any excess fat.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. In a large bowl, combine the cooked turkey mixture, cream of mushroom soup, milk, thyme, salt, and pepper. Mix well.
  6. Fold in the frozen mixed vegetables and the cooked noodles or rice.
  7. Pour the entire mixture into the prepared baking dish and spread it into an even layer.
  8. Bake for 20 minutes.
  9. Remove the dish from the oven and sprinkle the shredded cheddar cheese evenly over the top.
  10. Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.
  11. Let the casserole rest for 5 minutes before serving.

Notes

  • For a lower-fat option, substitute the cream of mushroom soup with plain Greek yogurt mixed with a little broth.
  • You can prepare this casserole completely, cover it, and refrigerate it for up to 24 hours before baking. Add 10 minutes to the initial covered baking time if cooking from cold.
  • Use any cooked grain you prefer, such as quinoa or brown rice, in place of noodles or white rice.
