Description

Prepare a flavorful weeknight dinner using chicken breast and broccoli cooked together in a single skillet with a sweet and savory honey garlic sauce.


Ingredients

  • 1.5 lb chicken breast, cut into 1-inch pieces
  • 4 cups broccoli florets
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Optional: Sesame seeds for garnish


Instructions

  1. Season the cut chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and nearly cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the broccoli florets to the same skillet. Cook for 3-4 minutes until they turn bright green and start to soften slightly.
  4. In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, and grated ginger.
  5. In a separate small bowl, mix the cornstarch and water to create a slurry.
  6. Pour the honey garlic mixture over the broccoli in the skillet. Bring the sauce to a simmer.
  7. Whisk the cornstarch slurry into the simmering sauce. Stir constantly until the sauce thickens, about 1 minute.
  8. Return the cooked chicken to the skillet. Toss everything gently to coat the chicken and broccoli evenly with the sauce.
  9. Cook for 1-2 more minutes until the chicken is fully cooked and the sauce clings to the ingredients.
  10. Serve immediately, garnished with sesame seeds if desired.

Notes

  • For a low-carb option, substitute the honey with a zero-calorie sweetener equivalent in sweetness.
  • If you prefer a crispier texture, roast the chicken and broccoli on a sheet pan at 400F for 15 minutes before tossing with the thickened sauce.
