Description

A delightful one-pan meal featuring tender chicken pieces roasted with vibrant vegetables, infused with the bright flavors of lemon and herbs. It’s a simple yet impressive dish perfect for any weeknight dinner.


Ingredients

  • 1.5 lbs bone-in, skin-on chicken thighs
  • 1.5 lbs small red potatoes, quartered
  • 1 lb broccoli florets
  • 1 red onion, cut into wedges
  • 1 lemon, half sliced, half juiced
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes and red onion with 1 tablespoon of olive oil, rosemary, thyme, garlic powder, salt, and pepper.
  3. Spread the seasoned potatoes and onions in a single layer on a large rimmed baking sheet.
  4. Roast for 20 minutes.
  5. While the potatoes and onions are roasting, toss the chicken thighs and broccoli florets with the remaining 2 tablespoons of olive oil, salt, and pepper in the same bowl.
  6. Add the seasoned chicken and broccoli to the baking sheet with the potatoes and onions. Arrange the lemon slices over the chicken and vegetables.
  7. Return the baking sheet to the oven and roast for another 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
  8. Squeeze the juice from the remaining lemon half over the entire pan before serving.

Notes

  • For crispier potatoes, ensure they are dry before tossing with oil.
  • You can substitute other vegetables like carrots, bell peppers, or Brussels sprouts.
  • Adjust herbs to your preference. Fresh herbs can also be used.
