Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup chopped yellow onion
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.75 cup milk
  • 2 tablespoons unsalted butter, melted


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
  3. Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Pour in chicken broth and add thyme and rosemary. Bring to a simmer.
  6. Return the browned chicken to the pot. Season with salt and pepper.
  7. In a medium bowl, whisk together flour, baking powder, and salt for the dumplings.
  8. In a separate small bowl, whisk together milk and melted butter.
  9. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  10. Drop spoonfuls of the dumpling batter onto the simmering chicken and vegetable mixture.
  11. Cover the pot and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy.
  12. Serve hot.

Notes

  • For extra flavor, you can add a bay leaf while the soup simmers.
  • If you prefer, you can use chicken breast instead of thighs, but cook time may vary.
