  • 1.5 lbs boneless, skinless chicken breasts, cut into cubes
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, oil-packed and chopped
  • 3 cups fresh spinach
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Season the chicken cubes with Italian seasoning, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides. Remove chicken from the skillet and set aside.
  3. Melt butter in the same skillet. Add minced garlic and cook for about 30 seconds until fragrant.
  4. Pour in chicken broth and heavy cream. Stir to combine and bring to a simmer.
  5. Add the chopped sun-dried tomatoes to the skillet.
  6. Return the browned chicken to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until chicken is cooked through.
  7. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  8. Stir in the grated Parmesan cheese until melted and the sauce is creamy.
  9. Taste and adjust seasoning if needed. Serve hot.

  • You can substitute chicken thighs for chicken breasts.
  • For a less creamy sauce, use half-and-half instead of heavy cream.
