- 1.5 lbs boneless, skinless chicken breasts, cut into cubes
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, oil-packed and chopped
- 3 cups fresh spinach
- 1/4 cup grated Parmesan cheese
Instructions
- Season the chicken cubes with Italian seasoning, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides. Remove chicken from the skillet and set aside.
- Melt butter in the same skillet. Add minced garlic and cook for about 30 seconds until fragrant.
- Pour in chicken broth and heavy cream. Stir to combine and bring to a simmer.
- Add the chopped sun-dried tomatoes to the skillet.
- Return the browned chicken to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until chicken is cooked through.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Stir in the grated Parmesan cheese until melted and the sauce is creamy.
- Taste and adjust seasoning if needed. Serve hot.
