  • Author: Alexander Knight
  • Total Time: 40 minutes
  • Yield: 4-6 servings
  • Diet: Vegetarian

Description

This One-Pot Garlic Parmesan Chicken Alfredo is a creamy, family-friendly pasta dish that’s perfect for a weeknight meal. It brings all the delicious flavors of classic Chicken Alfredo together in a single pot, minimizing cleanup and maximizing taste.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 12 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Season the chicken pieces with Italian seasoning, garlic powder, salt, and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
  3. Add the minced garlic to the same pot and cook for about 1 minute until fragrant, being careful not to burn it.
  4. Pour in the chicken broth and bring to a boil. Add the fettuccine pasta, stirring to ensure it doesn’t stick together.
  5. Return the browned chicken to the pot. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until the pasta is al dente and the liquid has slightly thickened.
  6. Stir in the heavy cream and grated Parmesan cheese. Cook, stirring constantly, until the sauce is creamy and heated through, about 2-3 minutes. Do not boil.
  7. Taste and adjust seasoning if needed.
  8. Serve immediately, garnished with fresh parsley and extra Parmesan cheese.

Notes

  • For a richer flavor, you can use chicken thighs instead of breasts.
  • Feel free to add your favorite vegetables like broccoli florets or spinach during the last few minutes of cooking.
  • If the sauce is too thick, add a splash more chicken broth or cream.
