  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1/2 cup sliced carrots
  • 2 tablespoons orange juice
  • 1 tablespoon honey (or maple syrup for vegan)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • Cooked rice or noodles, for serving


Instructions

  1. Toss the cubed tempeh with soy sauce and sesame oil in a bowl.
  2. Heat a large skillet or wok over medium-high heat. Add the tempeh and cook until golden brown on all sides, about 5-7 minutes. Remove the tempeh and set aside.
  3. Add the broccoli, bell pepper, and carrots to the same skillet. Stir fry for 3-4 minutes until tender-crisp.
  4. In a small bowl, whisk together the orange juice, honey, ginger, garlic, and cornstarch mixed with water to create the glaze.
  5. Pour the glaze over the vegetables and cook for 1 minute, stirring constantly until the sauce thickens slightly.
  6. Return the cooked tempeh to the skillet. Toss everything together until the tempeh and vegetables are well coated in the orange glaze.
