Oven-Baked Cabbage Burgers

Description

A simple recipe for making vegetarian cabbage burgers using an oven for a healthier, non-fried result.


Ingredients

  • 4 cups shredded green cabbage, lightly packed
  • 1 cup cooked brown rice
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup finely chopped onion
  • 2 large eggs, lightly beaten (or flax egg substitute for vegan)
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for brushing)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Sauté the shredded cabbage and chopped onion in a dry pan over medium heat for about 5 to 7 minutes until the cabbage softens slightly and releases most of its moisture. Drain off any excess liquid. Let cool slightly.
  3. In a large bowl, combine the cooked cabbage mixture, brown rice, breadcrumbs, minced garlic, beaten eggs (or substitute), soy sauce, thyme, salt, and pepper. Mix well until everything is evenly combined and holds together when pressed.
  4. Form the mixture into 6 equal patties, about 3/4 inch thick. Place them on the prepared baking sheet.
  5. Lightly brush the tops and sides of the patties with olive oil.
  6. Bake for 15 minutes. Carefully flip the patties and brush the second side with any remaining oil.
  7. Bake for another 12 to 15 minutes, or until the burgers are firm and golden brown on the edges.
  8. Serve immediately on buns with your preferred toppings.

Notes

  • For a crispier exterior, place the patties on a wire rack set inside the baking sheet before brushing with oil.
  • If your mixture seems too wet, add 1 more tablespoon of breadcrumbs until the patties hold their shape firmly.
  • To make this recipe vegan, use a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes) instead of chicken eggs.
