Bake these flavorful Oven Baked Falafel Patties at home for a wonderful Mediterranean plant-based meal. You will love how simple this recipe is to make.

- 1 (15-ounce) can chickpeas, rinsed and drained
- 1/2 cup fresh parsley, packed
- 1/4 cup fresh cilantro, packed
- 1/4 cup onion, chopped
- 2 cloves garlic
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne pepper (if using), salt, and black pepper.
- Pulse the mixture until it forms a coarse, slightly sticky mixture. Do not over-process into a paste.
- Transfer the mixture to a bowl. Stir in the olive oil.
- Form the mixture into small patties, about 1/2 inch thick. You should get about 8 to 10 patties.
- Place the patties on the prepared baking sheet.
- Bake for 20 to 25 minutes, flipping halfway through, until golden brown and firm.
Notes
- Pat the chickpeas very dry after rinsing for the best texture.
- If the mixture seems too wet, add one tablespoon of chickpea flour or breadcrumbs.
- Serve the falafel with pita bread, hummus, or a fresh salad.
