Description
Make adorable mini pancakes that you can eat like cereal! This fun breakfast trend is easy to make and perfect for a playful start to your day.
Ingredients
Scale
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 cup milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Vegetable oil or butter, for greasing
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. The batter should be slightly lumpy; do not overmix.
- Heat a lightly oiled griddle or non-stick frying pan over medium-low heat.
- Using a squeeze bottle or a piping bag with a small round tip, carefully pipe small circles of batter onto the hot griddle, about 1/2 inch in diameter. Work in batches so you don’t overcrowd the pan.
- Cook for about 1-2 minutes per side, or until golden brown and cooked through. They cook very quickly due to their small size.
- Transfer the mini pancakes to a bowl as they are cooked.
- Serve immediately with your favorite toppings like syrup, fruit, or whipped cream.
Notes
- For perfectly round mini pancakes, use a squeeze bottle or a piping bag with a small round tip to control the batter flow.
- Adjust the heat of your griddle as needed to prevent the pancakes from burning before they cook through.
- Feel free to customize your pancake cereal with different extracts or additions to the batter.
