Ingredients

  • 6 pounds ripe peaches, peeled, pitted, and chopped
  • 1 1/2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves


Instructions

  1. Combine peaches, sugar, and lemon juice in a large, heavy-bottomed pot.
  2. Bring the mixture to a boil over medium-high heat, stirring constantly.
  3. Reduce heat to low and simmer, stirring occasionally, for 1 to 1.5 hours, or until peaches are very soft and the mixture has thickened.
  4. Remove from heat and let cool slightly.
  5. Use an immersion blender to puree the peach mixture until smooth. Alternatively, transfer the mixture to a blender or food processor and process until smooth.
  6. Return the pureed peach mixture to the pot. Stir in cinnamon, nutmeg, and cloves.
  7. Continue to simmer over low heat for another 30-60 minutes, stirring frequently, until the peach butter is very thick and holds its shape on a spoon.
  8. Carefully ladle the hot peach butter into sterilized jars, leaving 1/2 inch headspace.
  9. Process in a boiling water canner for 10 minutes (adjust time for altitude if necessary).
  10. Remove jars from canner and let cool completely on a wire rack. Check seals after 24 hours.

Notes

  • Choose ripe, fragrant peaches for the best flavor.
  • Adjust sugar to your taste; if your peaches are very sweet, you might need less.
  • For a chunkier peach butter, puree only half of the mixture.
  • Store unopened jars in a cool, dark place for up to 1 year. Once opened, refrigerate and consume within 2-3 weeks.
