Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
- Prepare the crumb topping: In a small bowl, combine ¼ cup flour, ¼ cup brown sugar, and ½ teaspoon cinnamon. Add the cold, cubed butter. Use your fingertips or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Set aside.
- In a large bowl, whisk together 1 ½ cups flour, ½ cup granulated sugar, 2 teaspoons baking powder, ½ teaspoon cinnamon, and ¼ teaspoon salt.
- In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir just until combined and no dry streaks remain. Do not overmix.
- Gently fold in the diced peaches.
- Divide the batter evenly among the 12 muffin cups.
- Sprinkle the prepared crumb topping generously over the top of each muffin.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- If using frozen peaches, do not thaw them before adding to the batter.
- For extra flavor, you can toss the diced peaches with a teaspoon of brown sugar before adding them to the batter.
