Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the sliced peaches, 1/2 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss gently to coat the peaches evenly. Pour the peach mixture into the prepared baking dish and spread it in an even layer.
  3. In a separate medium bowl, whisk together the flour, 1/2 cup granulated sugar, baking powder, and salt for the topping.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. In a small bowl, whisk together the milk and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. The dough will be soft.
  6. Drop spoonfuls of the biscuit dough evenly over the peach mixture in the baking dish. You can flatten them slightly if you like, but they will spread as they bake.
  7. Sprinkle the coarse sugar over the biscuit topping.
