- 2 cups rolled oats
- 1 cup creamy peanut butter
- 1/2 cup mashed ripe bananas (about 2 medium)
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large bowl, combine the rolled oats, melted coconut oil, peanut butter, honey (or maple syrup), mashed bananas, vanilla extract, baking soda, and salt.
- Mix everything well until it is just combined. Do not overmix.
- Press the mixture evenly into the prepared baking pan. Press firmly to make sure the bars hold together.
- Bake for 20 to 25 minutes, or until the edges are lightly golden brown.
- Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
- Once cool, slice into bars. Store in an airtight container.
Notes
- For an extra treat, sprinkle chocolate chips on top before baking.
- You can use crunchy peanut butter if you prefer more texture.
- If the mixture seems too dry, add another tablespoon of mashed banana or a splash of milk.
