Description

Whip up these fantastic Peanut Butter Banana Oat Bars for a quick, wholesome, grab-and-go snack. They are packed with flavor and perfect for busy days!


Ingredients

  • 2 cups rolled oats
  • 1 cup creamy peanut butter
  • 1/2 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, combine the rolled oats, melted coconut oil, peanut butter, honey (or maple syrup), mashed bananas, vanilla extract, baking soda, and salt.
  3. Mix everything well until it is just combined. Do not overmix.
  4. Press the mixture evenly into the prepared baking pan. Press firmly to make sure the bars hold together.
  5. Bake for 20 to 25 minutes, or until the edges are lightly golden brown.
  6. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  7. Once cool, slice into bars. Store in an airtight container.

Notes

  • For an extra treat, sprinkle chocolate chips on top before baking.
  • You can use crunchy peanut butter if you prefer more texture.
