These easy peanut butter banana oatmeal cookies are a healthier treat. They are perfect for a quick breakfast or a satisfying snack.

- 1 ripe banana, mashed
- 1/2 cup peanut butter
- 1 cup rolled oats
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, mash the ripe banana until smooth.
- Add the peanut butter and rolled oats to the mashed banana. Mix until well combined.
- Stir in the chocolate chips, if using.
- Drop spoonfuls of the mixture onto the prepared baking sheet. Flatten slightly with the back of a spoon.
- Bake for 12-15 minutes, or until golden brown and set.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Use a very ripe banana for the best flavor and sweetness.
- You can use any type of peanut butter you prefer.
- Store leftover cookies in an airtight container at room temperature for up to 3 days.
- For a softer cookie, do not overbake.
