- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup cocoa powder
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup chopped peanut butter cups (optional, for extra indulgence)
Instructions
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, cocoa powder, and salt.
- In a separate bowl, whisk together the peanut butter, honey or maple syrup, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients over the dry ingredients and stir until everything is well combined and the oats are evenly coated.
- Spread the granola mixture in a single layer on the prepared baking sheet.
- Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crunchy.
- Let the granola cool completely on the baking sheet. It will crisp up as it cools.
- If using, stir in the chopped peanut butter cups once the granola has cooled.
- Store in an airtight container at room temperature.
