Ingredients

  • 6 pounds ripe pears
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice


Instructions

  1. Wash, peel, core, and quarter the pears.
  2. Place pears in a large pot or Dutch oven.
  3. Add sugar, cinnamon, cloves, and allspice.
  4. Cook over medium heat, stirring occasionally, until pears are very soft, about 20-30 minutes.
  5. Mash the pears with a potato masher or process in batches in a food processor until smooth or desired consistency.
  6. Return the pear mixture to the pot.
  7. Cook over low heat, stirring frequently, until the butter is very thick and dark, about 1-2 hours.
  8. Spoon hot pear butter into sterilized jars, leaving 1/4 inch headspace.
  9. Wipe rims and place lids and rings on jars.
  10. Process in a boiling water bath for 10 minutes (adjust for altitude).
  11. Remove jars and let cool completely.

Notes

  • Use ripe pears for the best flavor and texture.
  • Adjust spices to your preference.
  • Pear butter can be stored in the refrigerator for up to 3 weeks if not canning.
