Ingredients

  • 1 pint cherry tomatoes, halved

  • 1 tablespoon red wine vinegar
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 cup fresh basil leaves, chopped (for garnish)


Instructions

  1. Wash and quarter the potatoes.
  2. Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
  3. Bring to a boil over medium-high heat, then reduce heat to medium and simmer until the potatoes are tender when pierced with a fork, about 15-20 minutes.
