  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, whisk together the buttermilk and pickle juice.
  6. Alternately add the dry ingredients and the buttermilk mixture to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. Gently fold in the finely chopped dill pickles.
  8. Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  9. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
  10. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  11. While the cupcakes are cooling, prepare the maple frosting. In a large bowl, beat the softened butter until creamy.
  12. Gradually add the powdered sugar, alternating with the milk and maple syrup, until the frosting is smooth and spreadable. If using, mix in the maple extract.
  13. Once the cupcakes are completely cool, frost them generously with the maple frosting.
