Description

A comforting casserole that brings together the best of Polish pierogi and Italian lasagna. This layered bake features tender mashed potatoes, savory cheese, and crispy bacon, all nestled between tender pasta for a hearty and satisfying meal.


Ingredients

  • 1 pound lasagna noodles
  • 2 pounds russet potatoes, peeled and cubed
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 large onion, chopped
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh chives (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package directions. Drain and set aside.
  3. Boil potatoes until tender. Drain and mash with butter, milk, salt, and pepper until smooth.
  4. In a large skillet, cook chopped onion until softened.
  5. In a large bowl, combine mashed potatoes, cooked onion, crumbled bacon, shredded cheddar cheese, shredded mozzarella cheese, and sour cream. Mix well.
  6. Spread half of the potato and cheese mixture into the bottom of a 9×13 inch baking dish.
  7. Layer half of the cooked lasagna noodles over the potato mixture.
  8. Spread the remaining potato and cheese mixture over the noodles.
  9. Top with the remaining lasagna noodles.
  10. Cover with foil and bake for 25 minutes.
  11. Remove foil and bake for another 10-15 minutes, or until bubbly and golden brown.
  12. Let stand for 10 minutes before serving. Garnish with chives if desired.

Notes

  • For an extra layer of flavor, you can add sautéed mushrooms to the potato mixture.
  • If you prefer a less rich casserole, you can reduce the amount of butter and milk in the mashed potatoes.
  • This casserole can be assembled ahead of time and baked when ready to serve.
