- 8 ounces sharp cheddar cheese, grated
- 8 ounces Monterey Jack cheese, grated
- 4 ounces cream cheese, softened
- 1/2 cup mayonnaise
- 4 ounces diced pimentos, drained
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the grated cheddar cheese and Monterey Jack cheese.
- Add the softened cream cheese and mayonnaise to the bowl.
- Stir in the drained diced pimentos and cayenne pepper.
- Mix all ingredients together until well combined and creamy.
- Season with salt and black pepper to taste.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled.
Notes
- For a spicier spread, add more cayenne pepper or a pinch of red pepper flakes.
- You can use a food processor to make the spread extra smooth.
- Pimento cheese spread can be stored in the refrigerator for up to 5 days.
