Instructions

  1. Gather your ingredients. You need a pizzelle maker for this recipe.
  2. In a large bowl, whisk together the eggs and egg yolks until they are light and frothy.
  3. Add the sugar to the egg mixture and whisk until combined.
  4. Pour in the cooled melted butter, vanilla extract, and anise extract. Mix well.
  5. In a separate bowl, whisk together the flour, salt, and baking powder.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until you have a smooth batter. Do not overmix.
  7. Preheat your pizzelle maker according to the manufacturer’s directions. Lightly grease the plates if necessary.
  8. Drop one teaspoon of batter onto the center of the hot pizzelle iron. Close the lid immediately.

Notes

  • For the crispiest cookies, cool them completely on a wire rack away from humidity.
  • If you do not have anise extract, you can substitute it with 1 teaspoon of anise seed, crushed lightly.
  • If you prefer a different flavor, substitute the extracts with 2 teaspoons of almond extract for almond pizzelles, or add 1/4 cup of unsweetened cocoa powder and 1/2 teaspoon of cinnamon for chocolate pizzelles.
