Crispy polenta fries served with a delicious dip.
Ingredients

- 1 cup polenta
- 4 cups water
- 1 teaspoon salt
- 2 tablespoons olive oil
- For the dip: 1/2 cup mayonnaise
- 2 tablespoons sriracha
- 1 teaspoon lime juice
Instructions
- Bring the water and salt to a boil in a saucepan.
- Gradually whisk in the polenta, stirring constantly to avoid lumps.
- Reduce heat to low and continue stirring for 5-7 minutes, or until the polenta is thick and pulls away from the sides of the pan.
- Pour the polenta into a greased 8×8 inch baking dish and spread evenly.
- Let cool completely, then chill in the refrigerator for at least 1 hour.
- Once chilled, cut the polenta into fry shapes.
- Heat olive oil in a large skillet over medium-high heat.
- Add the polenta fries in batches and cook until golden brown and crispy on all sides.
- For the dip, whisk together the mayonnaise, sriracha, and lime juice in a small bowl.
- Serve the polenta fries hot with the sriracha mayonnaise dip.
Notes
- You can add other seasonings to the polenta, such as garlic powder, onion powder, or dried herbs.
- For a healthier option, bake the polenta fries instead of frying them. Bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.
