Description

Ingredients

  • 1 pound small red potatoes, quartered
  • 1 head cauliflower, cut into florets

  • Salt and freshly ground black pepper to taste
  • 4 ounces crumbled blue cheese
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard


Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a large baking sheet, toss potatoes and cauliflower with olive oil, salt, and pepper.
  3. Roast for 20-25 minutes, or until tender and lightly browned.
  4. In a large bowl, combine the roasted vegetables with blue cheese and parsley.
  5. In a small bowl, whisk together the red wine vinegar and Dijon mustard.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Serve warm or at room temperature.
