- 1 cup granulated sugar
- 0.5 cup packed brown sugar
- 0.5 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 0.5 cup milk
- 0.5 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the flour, pumpkin pie spice, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- In a separate bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
- Add the pumpkin puree and milk to the wet ingredients and mix until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- If using, gently fold in the chopped nuts.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For an extra boost of flavor, add a pinch of cardamom to the spice mix.
- Ensure your pumpkin puree is not pumpkin pie filling, as this already contains spices and sugar.
- These muffins are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
