- Salt and black pepper to taste

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pulse the cauliflower florets in a food processor until they resemble rice or couscous.
- Transfer the cauliflower rice to a microwave-safe bowl. Microwave on high for 4-5 minutes, or until tender. Let it cool slightly.
- Squeeze out as much moisture as possible from the cauliflower using a cheesecloth or a clean kitchen towel. This step is crucial for crispy bites!
- In a medium bowl, combine the squeezed cauliflower, mozzarella cheese, Parmesan cheese, egg, almond flour, oregano, garlic powder, salt, and pepper. Mix well until everything is evenly incorporated.
- Form the mixture into small bite-sized balls or flattened patties, about 1-1.5 inches in diameter. Place them on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown and firm.
- Add your favorite pizza toppings if desired during the last 5 minutes of baking.

Notes
- You can use different colored cauliflowers for a more vibrant ‘rainbow’ effect.
