  • 1/4 teaspoon garlic powder

  • 1/4 cup pizza sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pulse the cauliflower florets in a food processor until they resemble rice.
  3. Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for 4-5 minutes, or until tender. Let it cool slightly.
  4. Transfer the cooled cauliflower rice to a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This is a crucial step for crispy bites!
  5. In a medium bowl, combine the squeezed cauliflower, beaten egg, Parmesan cheese, 1/4 cup mozzarella cheese, flour, oregano, garlic powder, salt, and pepper. Mix well until a dough forms.
  6. Form the dough into small, bite-sized rounds or flattened discs. Place them on the prepared baking sheet.
  7. Bake for 15-20 minutes, or until lightly golden and firm.
  8. Remove the bites from the oven. Spoon a small amount of pizza sauce onto each bite and top with the remaining mozzarella cheese and any desired toppings.
  9. Return the bites to the oven and bake for another 3-5 minutes, or until the cheese is melted and bubbly.
