- 1 medium head of cauliflower, cut into florets
- 1 large egg, lightly beaten
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup gluten-free pizza or all-purpose flour
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 1/4 cup pizza sauce
- 1/4 cup shredded mozzarella cheese, for topping
- Optional toppings: mini pepperoni, chopped bell peppers, olives
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pulse the cauliflower florets in a food processor until they resemble rice.
- Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for 4-5 minutes, or until tender. Let it cool slightly.
- Transfer the cooled cauliflower rice to a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This is a crucial step for crispy bites!
- In a medium bowl, combine the squeezed cauliflower, beaten egg, Parmesan cheese, 1/4 cup mozzarella cheese, flour, oregano, garlic powder, salt, and pepper. Mix well until a dough forms.
- Form the dough into small, bite-sized rounds or flattened discs. Place them on the prepared baking sheet.
- Bake for 15-20 minutes, or until lightly golden and firm.
- Remove the bites from the oven. Spoon a small amount of pizza sauce onto each bite and top with the remaining mozzarella cheese and any desired toppings.
- Return the bites to the oven and bake for another 3-5 minutes, or until the cheese is melted and bubbly.
- Serve warm and enjoy your delicious pizza bites!
