Enjoy a healthy and fun breakfast on the go with these vibrant Rainbow Smoothie Popsicles. Layered with delicious fruits, these frozen treats are a perfect way to start your day.


Ingredients

  • 1 cup frozen strawberries
  • 1/2 cup plain Greek yogurt
  • 1/4 cup milk (any kind)
  • 1/2 cup frozen mango chunks
  • 1/4 cup orange juice
  • 1/2 cup frozen blueberries
  • 1 tablespoon honey or maple syrup (optional)


Instructions

  1. In a blender, combine frozen strawberries, Greek yogurt, and 2 tablespoons of milk. Blend until smooth. Pour this mixture into popsicle molds, filling them about one-third full. Freeze for 30 minutes.
  2. Rinse the blender. Combine frozen mango chunks, orange juice, and the remaining 2 tablespoons of milk. Blend until smooth. Carefully pour this layer over the strawberry layer in the popsicle molds. Freeze for another 30 minutes.
  3. Rinse the blender. Add frozen blueberries and honey or maple syrup (if using). Blend until smooth. Gently pour this blueberry mixture over the mango layer in the popsicle molds.
  4. Insert popsicle sticks into each mold. Freeze for at least 4 hours, or until completely solid.
  5. To unmold, run the popsicle molds under warm water for a few seconds. Enjoy your Rainbow Smoothie Popsicles!
