  • 1 cup shredded carrots
  • 1 cup thinly sliced red cabbage
  • 1 cup thinly sliced yellow bell pepper
  • 1 cup thinly sliced cucumber
  • 1 cup fresh spinach leaves
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup cooked vermicelli noodles
  • For the Peanut Dip:
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 2-4 tablespoons warm water, to thin


Instructions

  1. Prepare your vegetables: Wash and thinly slice or shred all your chosen vegetables.
  2. Assemble the rolls: Dip one rice paper wrapper in warm water for about 15-20 seconds until pliable.
  3. Lay the wrapper flat on a clean surface.
  4. Arrange a small amount of each vegetable, mint, cilantro, and noodles in the center of the wrapper.
  5. Fold the bottom edge of the wrapper over the filling, then fold in the sides.
  6. Roll up tightly to form a neat spring roll. Repeat with the remaining wrappers and filling.
  7. Make the peanut dip: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, ginger, and garlic.
  8. Gradually add warm water, one tablespoon at a time, until the desired dipping consistency is reached.
  9. Serve the rainbow spring rolls immediately with the peanut dip.

  • For a spicier dip, add a pinch of red pepper flakes.
