Ingredients
Scale
- 1 cup strong brewed coffee, chilled
- 1/2 cup milk (dairy or non-dairy)
- 2 tablespoons sugar or sweetener
- 1 cup ice cubes
- 1 teaspoon vanilla extract
- For Tiramisu: 6 ladyfingers, 1/2 cup mascarpone cheese, 1 egg yolk, 2 tablespoons sugar, 1/4 cup strong espresso, cocoa powder for dusting
- For Coffee Muffins: 1 1/2 cups all-purpose flour, 1/2 cup granulated sugar, 1 teaspoon baking soda, 1/2 teaspoon salt, 1/2 cup melted butter, 1 large egg, 1/2 cup strong brewed coffee
- For Coffee Rub: 2 tablespoons ground coffee, 1 tablespoon brown sugar, 1 teaspoon paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper
- For Spiced Coffee: 1 cup hot brewed coffee, 1/4 cup half-and-half, 1 tablespoon maple syrup, pinch of cinnamon
Instructions
- Prepare the Iced Coffee: Combine chilled coffee, milk, sugar, vanilla extract, and ice in a blender. Blend until smooth. Pour into a glass.
- Make the Simple Tiramisu (Single Serving): Whisk the egg yolk and sugar until pale. Gently fold in the mascarpone. Quickly dip the ladyfinger in the espresso and place it in a small dish. Top with the mascarpone mixture. Dust with cocoa powder. Chill for 30 minutes.
- Bake Coffee Muffins: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners. In a bowl, mix flour, sugar, baking soda, and salt. In another bowl, mix melted butter, egg, and coffee. Combine wet and dry ingredients until just mixed. Fill muffin cups two-thirds full. Bake for 18-20 minutes.
- Create the Coffee Rub: Mix ground coffee, brown sugar, paprika, salt, and pepper in a small bowl. Apply this mixture evenly to your preferred cut of meat before grilling or roasting.
- Mix Spiced Coffee: Combine hot brewed coffee, half-and-half, maple syrup, and cinnamon in a mug. Stir well before drinking.
Notes
- For the Iced Coffee, use frozen coffee cubes instead of ice to prevent dilution.
- When making the Tiramisu, ensure the espresso is strong and cooled slightly before dipping the ladyfingers.
- For the muffins, do not overmix the batter; a few lumps are acceptable.
- Adjust the amount of ground coffee in the rub based on the intensity of flavor you want for your meat.
