  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
  3. In a separate medium bowl, combine the buttermilk, vegetable oil, eggs, red food coloring, vinegar, and vanilla extract. Mix well.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
  7. Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  8. While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
  9. Gradually add the powdered sugar, mixing until combined.
  10. Stir in the vanilla extract and add milk, one tablespoon at a time, until the frosting reaches your desired consistency.
  11. Once the cupcakes are completely cool, pipe or spread the cream cheese frosting on top.
