Description

Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate medium bowl, whisk together the buttermilk, vegetable oil, eggs, vanilla extract, vinegar, and red food coloring.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  8. While the cupcakes cool, prepare the frosting. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
  9. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  10. Stir in the vanilla extract. Add milk, one tablespoon at a time, until the frosting reaches your desired consistency.
  11. Once the cupcakes are completely cool, frost them as desired.
