Description

  • 3 large yellow onions, thinly sliced
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1 cup long-grain white rice, uncooked
  • 2 cups beef broth (low sodium preferred)
  • 1/4 cup dry white wine (optional)
  • 1/2 cup shredded Gruyere cheese
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Melt the butter in a large, heavy-bottomed skillet or Dutch oven over medium heat.
  2. Add the sliced onions and 1/2 teaspoon of salt. Cook slowly, stirring occasionally, for 30 to 40 minutes until the onions are deep brown and fully caramelized. Do not rush this step.
  3. Stir in the uncooked rice and cook for 1 minute until the edges look translucent.
  4. If using, pour in the white wine and scrape up any browned bits from the bottom of the pan. Cook until the wine evaporates, about 2 minutes.
  5. Pour in the beef broth and bring the mixture to a simmer. Reduce the heat to low, cover the skillet tightly, and cook for 15 to 18 minutes, or until the liquid is absorbed and the rice is tender.
  6. Remove the skillet from the heat and let it stand, covered, for 5 minutes. Fluff the rice gently with a fork.
  7. Stir in the remaining 1/2 teaspoon of salt and the black pepper.
  8. Sprinkle the shredded Gruyere cheese evenly over the top of the rice. Cover the skillet again and let it sit for 3 to 5 minutes until the cheese is fully melted and gooey.
  9. Garnish with fresh chopped parsley before serving.

Notes

  • For the deepest flavor, use a high-quality, concentrated beef consommé instead of standard broth.
  • If you prefer a casserole style, transfer the cooked rice mixture (before adding cheese) to a small baking dish, top with cheese, and bake at 375°F (190°C) for 10 minutes until the cheese melts.
  • If you skip the wine, add 1/4 cup of the beef broth during that step.
