- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup warm water
- 2 tablespoons olive oil, plus more for brushing
- 1/2 cup roasted garlic cloves, mashed
- 1 cup fresh spinach, chopped
- 1/4 cup grated Parmesan cheese
- Pinch of black pepper
Instructions
- Combine flour, salt, and baking powder in a bowl.
- Stir in warm water and 1 tablespoon of olive oil until a dough forms. Knead briefly.
- Let the dough rest for 10 minutes.
- Preheat your oven to 400 degrees F (200 degrees C).
- In a small bowl, mix the mashed roasted garlic with the chopped spinach and black pepper.
- Roll the dough out thinly into a rough flatbread shape.
- Spread the garlic and spinach mixture evenly over the dough.
- Sprinkle with Parmesan cheese.
- Brush the edges with the remaining olive oil.
- Bake for 12-15 minutes, or until the edges are golden brown and crisp.
- Slice and serve immediately.
Notes
- You can roast your garlic ahead of time to save even more time.
- If you prefer a tangier flavor, substitute some of the Parmesan with Gruyere cheese.
- Feel free to add a sprinkle of red pepper flakes for a little heat.
