Description
Whip up this incredibly creamy Roasted Garlic White Bean Dip. It is simple, warm, and perfect for dipping your favorite veggies or crackers. You will love the depth of flavor from the roasted garlic.

- 1 head garlic
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil, plus more for roasting
- 1 tablespoon water (or more, as needed)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Slice about 1/4 inch off the top of the head of garlic, exposing the cloves. Drizzle with a little olive oil and wrap tightly in aluminum foil.
- Roast for 30 to 40 minutes, until the cloves are soft and caramelized. Let cool slightly.
- Squeeze the roasted garlic pulp out of the skins into a food processor.
- Add the rinsed white beans, lemon juice, 2 tablespoons olive oil, water, salt, and pepper to the food processor.
- Process until completely smooth and creamy. Add a splash more water if the dip is too thick for your liking.
- Taste and adjust seasoning if necessary. Serve warm or chilled with your choice of dippers.
Notes
- For an extra layer of flavor, add a pinch of smoked paprika before blending.
- If you prefer a tangier dip, increase the lemon juice slightly.
- This dip tastes even better after chilling for an hour, allowing the flavors to meld.
