Ingredients
Scale
- 2 lbs small potatoes (like Yukon Gold or red potatoes), cut into 1-inch pieces
- 3 tablespoons olive oil
- 1 tablespoon fresh rosemary, finely chopped
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cut potatoes with olive oil until they are evenly coated.
- Add the chopped rosemary, salt, and pepper to the potatoes. Toss again to distribute the seasonings well.
- Spread the seasoned potatoes in a single layer on a large baking sheet. Do not overcrowd the pan.
- Roast for 25 minutes.
- Remove the pan from the oven and sprinkle the grated Parmesan cheese evenly over the potatoes.
- Return the potatoes to the oven and roast for another 10 to 15 minutes, or until they are golden brown and crispy.
- Serve immediately and enjoy your delicious potatoes!
Notes
- For extra crispiness, ensure your potatoes are dry before tossing them with oil.
- You can use dried rosemary, but reduce the amount to 1 teaspoon.
- If you prefer a stronger cheese flavor, add a bit more Parmesan during the last few minutes of cooking.
