- 3 cups confectioners’ sugar, sifted
- 2 tablespoons meringue powder
- 1/4 cup warm water
- 1 teaspoon clear vanilla extract
Instructions
- In a large bowl, whisk together the sifted confectioners’ sugar and meringue powder.
- Add the warm water and vanilla extract to the dry ingredients.
- Beat the mixture with an electric mixer on low speed until combined.
- Increase the speed to medium-high and beat for 5 to 7 minutes until the icing is stiff, white, and glossy.
- If the icing is too thick for piping, add water one teaspoon at a time until you reach the desired consistency.
- If the icing is too thin for outlining, add more sifted confectioners’ sugar one tablespoon at a time.
- Cover the bowl with a damp cloth while working to prevent the icing from drying out.
Notes
- For outlining consistency, the icing should hold a soft peak when lifted.
- For flooding consistency, the icing should flow smoothly off a spoon and disappear back into the surface within 10 to 12 seconds.
- Store unused icing in an airtight container at room temperature for up to one week.
- To make a glossy finish, avoid incorporating too much air during the final mixing stages.
